This dish goes very well with black olives, mint and grains. You can use spelt, freekeh or wheat as grains.

Ingredients for 2-4 servings
- 200gr grains (spelt or freekeh for example)
- 2 red paprika’s
- 3 medium-sized red onions
- 1 zucchini
- 100gr black olives
- handful pine nuts
- 1 spoon of mint
- 1 spoon of oregano
- fresh and chopped parsley
- pepper and salt

- 2 rode paprika’s
- 3 middelgrote rode uien
- 1 courgette
- 100gr zwarte olijven
- handvol pijnboompitten
- 1 eetlepel munt
- 1 eetlepel oregano
- verse gesneden peterselie
- peper en zout
Recipe
- Cook the grains for roughly 25 minutes
- Chop the paprika’s, onions, zucchini and olives in small pieces
- Bake the onions for 10 minutes in a bit of olive oil
- Add the paprika, zucchini and olives and cook until the vegetables are soft
- Add the grains and pine nuts
- Add the spices
