Hot vanilla cake with raspberries / Warme vanille cake met frambozen

The vanilla-bread is at its best when it is still hot from the oven. You can use whatever format you like – you can make muffins and chop them in little slices or you can use a small cake format. Serve with fresh raspberries, or alternatively you can serve it with hot berry sauce.

Season: autumn, summer

Ingredients for 6 muffins or a small cake

  • 180gr spelt flour
  • 2 teaspoons of baking powder
  • 2 eggs
  • 150gr yogurt
  • 60gr olive oil
  • 50gr honey
  • 2 teaspoons of vanilla extract
  • bit of salt

Ingrediënten voor 6 muffins of een kleine cake (Dutch)

  • 180gr speltbloem
  • 2 theelepels bakpoeder
  • 2 eieren
  • 150gr yoghurt
  • 60gr olijfolie
  • 50gr honing
  • 2 theelepels vanille aroma
  • beetje zout


  1. Mix the eggs, yogurt, honey, olive oil and vanilla extract.
  2. Add the spelt flour, baking powder and a little bit of salt and mix shortly.
  3. Bake for 25 minutes in an oven on 200 degrees
