I love cauliflower. And not only that, it seems to be the perfect candidate to add to your lunch at work as a raw vegetable. You can buy one cauliflower, and take one fifth per day of the working week. The cauliflower is as delicious on Friday as it is on Monday. You can try this recipe also with other vegetables, but I’ve already tried it with carrots and celery, and that is a bit more difficult to keep fresh throughout the week. Note that if you are not a fan of cheese or if you are vegan, you can leave the cheese out. I always buy local biological cheese, often trying something new. Feel free to experiment. I prepare my lunch box every morning, it is not necessary to keep it in the fridge.
Season: summer, autumn
Ingredients for 1 serving
- 1/5 of a cauliflower
- 3 spoons of hazelnuts (but you can also replace by almonds or cashew nuts)
- small block of cheese
- 1/2 spoon of hemp seed
Ingrediënten voor 1 portie (Dutch)
- 1/5 bloemkool
- 3 eetlepels hazelnoten (maar je kan die ook vervangen door amandelnoten of cashewnoten)
- klein blokje kaas
- 1/2 eetlepel hennepzaad
- Wash the cauliflower and chop it in small pieces.
- Cut the cheese in small pieces and add to the cauliflower.
- Add the nuts and seeds.
