Cheese bread with raisins and cranberries / Kaasbrood met rozijnen en veenbessen

I loved this cheese bread with raisins and cranberries so much I made it twice in the same weekend. The raisins and cranberries give it a bit of a sweet touch. I used Comté cheese (a hard neutral cheese), but you can experiment with any cheese you feel like or you have at home.

Season: summer, autumn, spring, winter

Ingredients for one bread

  • 150gr cheese
  • 2 eggs
  • 100gr rye flour
  • 100gr spelt flour
  • 2 teaspoons of baking powder
  • 100ml milk
  • olive oil
  • handful of raisins
  • handful of dried cranberries
  • 2 handful of pecans
  • bit of salt

Ingrediënten voor één brood (Dutch)

  • 150gr kaas
  • 2 eieren
  • 100gr roggemeel
  • 100gr speltbloem
  • 2 theelepels bakpoeder
  • 100ml melk
  • olijfolie
  • handvol rozijnen
  • handvol gedroogde veenbessen
  • 2 handvol pecannoten
  • beetje zout

Recipe

  1. Grate the cheese and chop the pecans in small pieces.
  2. Mix the eggs.
  3. Add the rye flour, spelt flour, baking powder and a bit of salt, and mix.
  4. Add olive oil and milk, and mix.
  5. Add the cheese, raisins, cranberries, chopped pecans. Add some more olive oil if the mixture is too dry.
  6. Bake for 50 minutes in an oven on 180 degrees. A pricker should come out dry.
