Chocolate oatmeal cookies / Havermoutkoekjes met chocolade

These chocolate oatmeal cookies are delicious! Plus, they are healthy and ready in no time! I prepared two batches: one with pieces of chocolate and one with melted chocolate. Up to you if you want to do the same, or only choose one of the two options.

Ingredients for 14-18 cookies

  • 150gr oatmeal
  • 50gr roasted hazelnut meal
  • 50gr coconut oil
  • 1,5 tablespoon of honey
  • 1 teaspoon vanilla extract
  • 100gr black chocolate
  • 2 eggs

Ingrediënten voor 14-18 koekjes (Dutch)

  • 150gr havermout
  • 50gr geroosterde hazelnootmeel
  • 50gr kokosolie
  • 1,5 eetlepel honing
  • 1 theelepel vanille extract
  • 100gr zwarte chocolade
  • 2 eieren

Recipe

  1. Heat the coconut oil in a pot until it is liquid and let it cool down.
  2. Mix the eggs in a bowl.
  3. Add the oatmeal, hazelnut meal, coconut oil, honey, vanilla extract and chocolate (either in small pieces or either as melted chocolate).
  4. Make cookies out of the dough and bake them for 15 minutes in an oven on 180 degrees.
