Mashed potatoes with fennel, olives and tomatoes / Aardappelpuree met venkel, olijven en tomaten

This combination of mashed potatoes with fennel, green olives, roasted cherry tomatoes and pecans is truly delicious!

Ingredients for 2-3 portions

  • 700gr potatoes
  • 400gr cherry tomatoes
  • 1 fennel
  • 150gr green olives
  • 2 handful of pecans
  • pepper, salt, thyme, nutmeg
  • a bit of olive oil
  • a bit of milk

Ingrediënten voor 2-3 porties (Dutch)

  • 700gr aardappelen
  • 400gr kersttomaten
  • 1 venkel
  • 150gr groene olijven
  • 2 handenvol pecannoten
  • peper, zout, tijm, nootmuskaat
  • een beetje olijfolie
  • een beetje melk

Recipe

  1. Remove the peel from the potatoes and cook them for 30 minutes in a pot of boiling water.
  2. Cut the olives, fennel and pecans in small pieces.
  3. Prepare an oven dish with the cherry tomatoes, some olive oil and thyme. Roast them for 10 minutes in an oven on 180 degrees.
  4. Add some olive oil in a pot and let the fennel pieces and olives simmer for 10 minutes.
  5. Drain the potatoes. Add some milk, pepper, salt and nutmeg and mash the potatoes.
  6. Add the fennel pieces, olives, cherry tomatoes and pecans.
