Belgian endive salad with apple and stale bread / Witloof salade met appel en oud brood

This is the best leftover meal I’ve made in ages. I had one Belgian endive left, some cherry tomatoes and a bread that was a bit dry in my opinion. And I always have some apples and eggs, so I used egg to bake the bread in a pan. Then I combined the Belgian endive, cherry tomatoes and apple with the bread. Healthy, ready in no time, and delicious!

Ingredients for one dish

  • 1 Belgian endive
  • a few cherry tomatoes
  • an apple
  • two eggs
  • stale bread

Ingrediënten voor één bord (Dutch)

  • 1 witlof
  • een aantal kersttomaten
  • een appel
  • 2 eieren
  • oud brood

Recipe

  1. Chop the Belgian endive, apple and cherry tomatoes in small pieces.
  2. Mix the two eggs. Cut the bread in small pieces, dip them in the eggs and add them to a pan. They are ready when they start to turn brown. Add the bread to your dish and enjoy!
